Menu Plan: 1/2- Scrounging Around



It's another "Desperation Week" in the Parenting Miracles household! We were due for another big monthly grocery trip this weekend but, well, it just wasn't happening. And that's ok! So we only have one pound of ground beef and a measly chicken breast rolling around. Oh, and a single ten-pack of sausage links. We'll work it out.

Here's what I'm dishing up:

Sunday:

B-Cereal, Yogurt, Juice
L-Hot Dogs, Pears, Milk
D-Chicken and Spanish Rice Enchiladas (When you only have ONE chicken breast and five people to feed, you gotta stretch it with something... and hubby HATES beans.)

Monday:

B-English Muffins w/ PB, Oranges, Milk
L-Cheesy Beans & Rice, Water (my go-to cheap staple)

Tuesday:

B-English Muffin/Egg Sandwiches, Juice
L-Baby Pigs in Blankets (I have some tiny cocktail franks left over from C's family party!), Grapes, Milk
D-Salsa Jack Frittata (using some stale baguette I have rolling around)

Wednesday:

B-Granola, Raisins, Milk
L-Spanish Rice, String Cheese, Grapes, Water

Thursday:

B-Hot Cocoa Oatmeal, Strawberry Yogurt (really, plain yogurt with homemade jam stirred in), Water
L-Migas, Apples, Milk

Friday:

B-Smoothies, Toast
L-Cheesy Beans & Rice, Water
D-Mushroom & Onion Pizza

Saturday:

B-Scrambled Eggs, Sausage Links, Toast
L-Pasta Salad, whatever fruit is left over
D-Spaghetti, Broccoli

And that'll do it. Really, despite the lack of meat, no one will be suffering. The fact that I have a couple pounds of cheese and two dozen eggs is really helping me out. (Shhh... I really kind of enjoy putting together "desperation week" menu plans!)
